Types of Ham and Differences
When we decide to buy a ham, the first thing we have to think about is the type of ham we are going to choose. Its type will depend on the classification, which in turn is related to the breed of the animal and its diet. Depending on the breed, hams are distinguished between Iberian ham and white ham, from which serrano ham is obtained.
Iberian hams only come from a native breed of the Iberian Peninsula, that is, Spain and Portugal, exclusively. Only in this area can this type of pigs be found. This is due to the climate and conditions of the Iberian Peninsula, essential for the development of this breed of pigs.
All hams, regardless of their breed, come from the hind legs of the pigs. If they come from the front legs, they are called shoulders.
Another aspect that differentiates them is the taste of the meat and fat. In the case of Iberian hams, these pigs have a peculiarity in genetics. Fat infiltrates the muscle meat due to the specific diet these animals have, based on pastures and acorns, and their free-range lifestyle in the meadows. This breeding method results in hams with juicy meat full of aromas and nuances.
Another aspect that helps us to easily differentiate the ham we are going to buy is through the classification approved by the regulation implemented in 2014. With it, a classification is established based on the colors of the labels hanging from the hooves of each of the hams for sale.
- The black label informs us that the ham is acorn-fed and 100% Iberian.
