Weighing between 2.8 and 3.53 kilograms, Boffard Reserva cheese offers intense aroma and flavor, with a spicy touch that lingers on the palate. Its texture and refined bouquet are the result of the application of traditional techniques and exceptional craftsmanship by Boffard. It is recommended to consume it within 12 months of purchase and store it at a low temperature, between 2 and 8 degrees Celsius, to maintain its freshness and quality. Being a dairy product, Boffard Reserva cheese also benefits from the VAT exemption, resulting in a 4% discount on its price. Founded in 1880 with the opening of its first factory, Boffard is a renowned company in the crafting of artisanal cheeses. Boffard Reserve Cheese is characterized by its unique flavor, with a subtle aroma of nuts and a light touch of spiciness and saltiness. This cheese is made from raw sheep's milk, following a traditional aging process in the cellar.

The crafting process of Boffard Reserve Cheese is careful and detailed: fresh sheep's milk and rennet from suckling lamb are used, and the cheese is molded with cotton cloths. During its aging in the cellar, which extends over several months, the cheeses are brushed and oiled periodically. Only when Boffard's Master Cheesemakers determine that the cheese has reached its optimal maturity point, those that meet the company's demanding quality standards are selected. This craftsmanship has been passed down from generation to generation and is what led Boffard to be appointed Supplier to the Royal Household during the reign of Alfonso XII.
