The secret of its unmatched flavor lies in the feeding of these Iberian pigs, based on natural pastures and carefully selected feed. This diet contributes to the unique texture and flavor of ham.
The production process is a ballet of ancient techniques: after being cooled, the ham is cut into a stylized "V", and then follows a trimming of the external bacon. Afterwards, it is salted, washed and balanced. Finally, it undergoes a drying and aging process in cellars, where it rests for 24 to 30 months, absorbing the essence of the environment and acquiring an incomparable flavor and aroma.
