This is ham made with 100% pure Iberian pigs, slaughtered after the 21st month of life. Pigs that enjoy two separate grazing stages, in the second of which they grow over 70kg on fully natural food. Their meat is then cured for over 40 months in natural drying cellars.

During all that time, Arturo Sánchez has only improved, perfecting their pig selection, craft, and above all the detailed care that the maturation process require, resulting, today, in a product that can only be called a gastronomical jewel.
Their facilities in Guijuelo combine the newest technological advances with this old, proud tradition, leading to a traditionally crafted product that nonetheless satisfies even the strictest quality controls.
An artisan tradition
This inherited legacy of artisanship is important to us at Arturo Sánchez, and we believe it makes us stand out from our competitors.
The artisan craft is the single most important lesson learned from our ancestors, one we take to heart and try to improve on every day: natural marinating and spicing, stuffing and tying sausages and meats by hand, drying our products to the heat of an oak bonfire… always with the utmost care, in order to only improve on an already marvelous raw material.
Thus, all of our products are dried in natural drying cellars in Guijuelo, taking advantage of the cold, dry air of the nearby mountains of Gredos, carefully controlling the curation process daily by manually regulating air flow to ensure that slow, calm curation that gives our products their unmistakable aroma and flavor.

An unique pig
The best ham can only be gotten from the best pigs, so at Arturo Sánchez we use nothing but the very best handpicked pigs, raised free-range in open mountainsides and meadows.
This is why, year after year, a majority of the pigs slaughtered here at Arturo Sanchez are from the breed called Pure Iberian: 100% Iberian pigs raised free-range for nearly two years while feeding only on natural food (mostly acorns and grazing grasses). These pigs are the best of the Iberian breed.
The pig and its environment
The best pigs are always the ones raised in their natural habitat: living freely among the oak forests, developing slowly and fattening naturally according to its own natural rhythms. These are the pigs that Arturo Sánchez handpicks. By the time they’re slaughtered, these pigs average about 18 months old, exceeding 21 for the Pure Iberians.
The best meadows
If you want the best pig, you need the best meadows to raise it in. You need an area that provides both rough oak forests and soft rolling hills, fertile enough to ensure the pigs can freely graze on acorns for over three months at a time. This is where we raise our pigs. All this guarantees that our pigs are in perfect shape, ensuring proper fat filtration into the muscle tissue and letting them gain over 60kg during this free-range fattening in pure healthy muscle tissue and fat. This way, what we get is the unsurpassed raw materials we need to make our Arturo Sanchez products.
