Product information
Discover the exquisite 100% Ibérico Field-Fed Ham COVAP Alta Expresión, a gastronomic jewel that captures the essence of a unique culinary tradition. This exceptional ham comes from Ibérico pigs raised in total freedom in the vast Spanish meadows, where they feed on the natural resources of the environment, enriching their diet with selected natural feeds. The combination of this diet and the freedom of movement in open spaces gives the ham an incomparable texture and flavor.
The piece, weighing between 6 and 7 kilograms, undergoes a meticulous salting and curing process that extends for more than 36 months in natural cellars. This long curing period not only intensifies its flavor but also ensures a tender texture and an aroma that evokes the purity of the Ibérico countryside.
Regarding its composition, the 100% Ibérico Field-Fed Ham Alta Expresión stands out for its simplicity and authenticity. Made only with Ibérico pork ham, sea salt, and natural preservatives (sodium nitrite and potassium nitrate), it strictly complies with the New Ibérico Standard, established by RD 4/2014 of January 10, thus guaranteeing its quality and origin.
To satisfy the diverse tastes and needs of our customers, we offer this delicacy in two presentations: as a whole piece with bone, ideal for tradition lovers who enjoy carving their ham at home, and in convenient 100-gram packets, hand-sliced by master ham cutters, perfect for enjoying directly and sharing on any special occasion.
COVAP Alta Expresión 100% Ibérico Field-Fed Ham is a culinary experience that transports the diner to the heart of the Ibérico meadows, offering authentic flavor, unparalleled quality, and the promise of unforgettable moments around the table.
COVAP Ibéricos At the core of the extensive meadows of the Iberian Peninsula, a place where time seems to pause, emerges an unparalleled culinary gem: COVAP Hams. These gastronomic marvels, true treasures of the kitchen, are forged from a firm commitment to purity and excellence.
Since its inception, COVAP has been characterized by detailed attention to the origin of its products. The ancestral oaks of the region, silent guardians of generations, offer their precious acorns in a cycle that perpetuates annually. This is the true soul of the meadow, the sanctuary where purebred Iberian pigs, proudly registered in the genealogical book, are raised freely, exploring every corner of these privileged lands.
The key to their unique texture and flavor lies mainly in their diet. The classifications of Acorn and Field-Fed unveil a rich and diverse diet: from fresh herbs, thyme, and broom, to acorns during the montanera, supplemented with grains such as wheat, corn, and barley. Each tasting reflects this varied and natural diet, a harmony of flavors that only nature can compose.
However, what truly distinguishes COVAP Hams as a culinary masterpiece is their meticulous production process. From the first application of salt from the Odiel salt flats to the last day of curing in the cellars, each stage is carefully supervised by COVAP's master ham cutters. These artisans, custodians of a millennia-old heritage, ensure that each ham is cured to perfection.
In 2016, COVAP was recognized with the "Best Ham of Los Pedroches" award and also received the "Superior Taste Award 2016," achieving the highest distinction of three stars for its exceptional flavor.
