A superior breed with a magnificent aptitude for the production of Iberians with a perfect texture, due to its free-range breeding in the pastures and its diet based on acorns.
This shoulder is a special piece that our Master Ham Makers take care of during a slow curing process of more than 12 months in natural cellars, to ensure the best quality.
During the Montanera period, this pure and unique species feeds primarily on acorns, herbs and roots from our pasture, which provide oleic acid and antioxidant substances that offer beneficial qualities for health.
